Yield: 24 Cookies
Prep Time: 25 Minutes
Cook Time: 8 Minutes
• 2 bottles of Milk Stout
• 2 1/2 cup plus 2 Tbs. flour
• 1 tsp. baking soda
• 1 tsp. fine sea salt
• 3/4 cup butter, softened
• 1/2 cup granulated sugar plus 3 Tbs.
• 1 cup packed light brown sugar
• 1 1/2 tsp. pure vanilla extract
• 2 large eggs
• 2 cups chocolate chips
First, reduce the beer down until you have about 1/3 cup left. Make sure to simmer the beer, without boiling, until it cooks down. After you remove it from the heat, stir in 3 Tbs. granulated sugar until dissolved. Set aside.
Preheat the oven to 375 degrees. Line baking sheet with parchment paper. In a medium bowl, whisk together the flour, baking soda, and fine sea salt. Set aside.
In the bowl of a stand mixer fitted with a paddle attachment, beat the butter with the sugars until creamy. Add the vanilla and beat until thoroughly combined. Beat in the eggs, one at a time. Slowly add the flour mixture to the mixer bowl, mixing it in a little at a time. Alternate the flour mixture with the reduced beer until it’s fully incorporated.
The batter will be a bit airier than normal cookie dough. If it seems a little thin, add an additional 2 Tbs. of flour and stir. Then stir in the chocolate chips. Use a spoon to drop balls of dough onto the baking sheet. Bake for 8-10 min., until set and golden.
